Wattage determines heat output and drying speed, but not simply. A 1875W hair dryer with poor airflow efficiency can dry slower than a 1600W dryer with well-engineered airflow. The combination of heat and airflow determines drying speed -- wattage alone is not predictive. Reviews that mention drying time for specific hair types and lengths are the most reliable performance indicator.
