Brew temperature is the spec most buyers ignore and most manufacturers obscure. Coffee extracts optimally at 195-205 degrees F. Budget drip machines often brew at 165-185 degrees F, producing under-extracted coffee that tastes weak and sour. SCAA-certified coffee makers meet the temperature standard and are guaranteed to brew in the correct range. If you are buying a drip machine for serious coffee, the SCAA certification is the only objective quality signal that matters.
Carafe type changes the entire coffee experience. Glass carafes show how much coffee remains at a glance but require the hot plate to keep coffee warm -- which scorches the coffee over 20-30 minutes. Thermal carafes keep coffee hot for 2-4 hours without scorching. If you drink coffee over the course of a morning rather than one cup at a time, a thermal carafe is the right choice.
