The material debate most buyers reduce to wood versus plastic is more nuanced than that. Wood and bamboo boards are gentle on knife edges because they have give, but they harbor bacteria in deep cuts over time and cannot go in the dishwasher. High-density polyethylene plastic boards are non-porous and dishwasher-safe, making them more hygienic for raw meat work. A 5mm groove holds meaningfully more liquid. Boards sold as having juice grooves vary widely, and photographs rarely convey the actual depth. Reviews that mention overflow are a reliable signal of a shallow groove.
