Induction only works with ferrous cookware -- pans with iron or steel content. Aluminum, copper, and glass cookware does not work with induction unless the manufacturer has added a ferrous base layer. The simple test is whether a magnet sticks to the bottom of the pan. Power level precision determines what the cooktop is actually good for. High-end induction cooktops have 10 or more discrete power levels with genuine temperature differentiation between them. For tasks like melting chocolate without burning or holding a gentle simmer, the precision of the power levels matters more than maximum output.
